As a mom of three children (one is a 3 month old). I am always on the lookout for Dinners that I can get on the table in thirty minutes or less. Things I look for in a meal are does it hit most of the food groups and does it incorporate whole foods. I have slowly started changing my family’s eating over to clean eating with whole foods. But the last thing I want to do with nap time is prep a meal. So whether you are a full time working mom or a stay at home mom..I am sure we can all use some Dinner inspiration from time to time. Below is one of my family’s favorite meals and I will have more meal ideas in the future.
Grilled Fish, Steamed Green Beans, and Mixed Salad
Mahi Mahi (your favorite fish)
2 tbsp olive oil
1 tbsp Lemon Juice
4tbsp dried parsley crushed
4tbsp onion flakes
2tbsp dried basil
1tsp ground oregano
1tsp ground thyme
1tsp garlic powder
1tsp sea salt
1/4 tsp ground black pepper
1. Heat up grill to around 400 or use your broiler on high make sure to line your baking sheet with aluminum foil or place 2 to 4 pieces of fish on aluminum foil pieces.
2. Mix olive oil and lemon juice in small bowl..dip or brush fish with the lemon and olive oil mixture.
3. Mix remaining seasonings in small bowl and rub onto fish coating each side. Wrap fish in aluminum foil or place on baking sheet. Cook on grill or broiler 12 mins each side.
1. Place fresh or frozen green beans in small bowl fill with 1/4 cup of water. Sprinkle with Garlic Salt or season to taste. Cover with cling wrap and microwave on high for 6 minutes.
1 cup mixed greens
1 cup mixed spinach
1 apple peeled and chopped
2 tbsp craisins
1 tbsp almonds
3 tbsp chopped white cheddar cheese
2 tbsp favorite dressing (Our family loves Brianna’s champagne Caper Vinaigrette)
Mix all ingredients in bowl and toss with dressing.
Brown and Wild Rice
We use Uncle Ben’s Ready Whole Grain Medley follow the directions on the back. My favorite way to cook it is place in sauce pan with about a 1/4 cup of water and cook on low til ready to serve.
