Easy Chicken “fried rice”

Feeling like Chinese food but don’t want all the calories, salt, and bloat? I’ve got just the thing! It’s faster than making rice plus instead of 204 calories per cup, it’s only 27.. and tastes even better! It’s cauliflower! Crazy right?!! That’s what I thought too! Believe me, just give it a try.. this ones a keeper, promise!! (coming from someone who doesn’t even like cauliflower!) I got this recipe from steamykitchen.com. (it is also gluten-free!)

FriedRice

Servings: 4
Prep Time: 5 minutes
Cook Time: 10 minutes

INGREDIENTS:
4 slices bacon, chopped (or more if you prefer)
1 small onion, finely minced
1 head cauliflower, grated (stems included)
1 tablespoon water
1 cup frozen mixed vegetables
1 Tablespoon Bragg’s Liquid Aminos or Coconut Aminos (or to taste)
(I used Coconut Secret’s raw coconut aminos from whole foods… highly recommend using it, very tasty but not too salty!)

DIRECTIONS:
STEP 1: In a large saute pan over medium heat, cook bacon until almost crispy.

STEP 2: Add the onions and fry until translucent.

STEP 3: Turn heat to high. Add the grated cauliflower and stir fry for 1 minute. Add water and mixed vegetables, stir well, cover the pan, lower to medium heat, and let the cauliflower mixture steam for another 3 minutes or until tender.

STEP 4: Uncover and add aminos to combine. Toss well. Taste and add additional sauce as desired.

STEP 5: Add Chicken or shrimp (or whatever you prefer)

I also added a fried egg to give it more of the “fried rice” feel. It was seriously so delicious, WAY better than the fried rice you get from takeout plus I didn’t feel guilty getting seconds (or thirds!)
