Simple Healthy Week Night Dinner

Happy Hump Day! Usually by Wednesday I get in a funk and I’m tired of trying to make healthy home-made meals. Good thing I have Go-To recipes like these that couldn’t be easier with only 3 main ingredients, I can prepare a delicious meal in minutes the whole family enjoys! Hooray for REAL FOOD! (It does take some time to actually cook, so plan accordingly!)

2 heads Broccoli, cut into florets
1 large Sweet Potato, peeled and cut into bite-size cubes
6 Chicken Thighs (I prefer mine boneless, skinless)
½ cup Extra Virgin Olive Oil
1-1/2 tsp Garlic Powder
½ tsp Oregano
Sea Salt, to taste
Black Pepper, to taste

*optional- I like to add minced fresh garlic, mainly because I love garlic & it’s really good for you!!


Preheat oven to 375F. Using a 9×13 glass baking dish. Spread out the chicken evenly in the bottom of the dish and spread the veggies around and on top of the chicken evenly. Drizzle olive oil over them and stir to evenly coat. Sprinkle the garlic powder, oregano, salt, and pepper on top.(And minced garlic) Bake in preheated oven for 45 minutes, uncovered. Remove from oven and let chicken rest a few minutes before serving to keep the juices inside. Enjoy!
